Erin is a Charlotte native (yes, we do exist) now living in a 90-year-old house in the adorable town of Belmont. She has been cooking out of necessity for almost 10 years now and for pleasure for about six months. Over the years she has discovered cuisines outside of “Chilis” (not that there’s anything wrong with that) and has come to love Indian, Thai and Vietnamese food. Erin is also an avid beer drinker and wants the world to know that there is life after Bud Light.

Most Memorable Kitchen Disaster: Heating up Pop Tarts in the microwave as a kid, IN the foil wrapper. It abruptly caught fire and exploded. Also, I once put a pot of pasta on to boil and went to do something else, promptly forgot and came back an hour later to a pot full of mushy pasta burned to the bottom.

Kitchen pet peeve: Things catching on fire. Slaving over a recipe, getting it just right, only to have it burn to a crisp because the oven was too hot, timer wasn’t set, stars weren’t aligned, etc…

Kitchen tool you can’t live without: My slow cooker! It’s a new addition to my kitchen and I love it. You throw everything in, set the timer and ‘voila,’ dinner is ready when you get home. So far we have made Mexican tortilla soup, loaded baked potato soup, spaghetti sauce, chicken & noodles and barbecue.

Guilty food pleasure: Macaroni and Cheese. It really has no redeeming nutritional value, yet is awesome. I keep an “emergency” box of mac & cheese in the cabinet, which of course is vastly inferior to homemade but will do in a pinch.

What can you always find in your fridge: Wheat beer, usually a Dunkelweizen or Hefeweizen. Pretty soon, we’ll be drinking our own, home brewed beer! Currently in the process of brewing a Belgian Witbier and an IPA.

Weighing Healthy Choices In The School Lunch Line

Cindy Ayers takes great pride in her kitchen. She keeps everything clean and well organized. She has to – she feeds hundreds of Elementary school kids every day. Ayers is the Cafeteria Manager at Highland Creek Elementary and oversees the preparation and serving of about 800 meals daily, including breakfast and after school snacks. But the real haul comes at lunchtime when 600-700 kids buy a school made lunch (out of 1200 enrolled). We visited the cafeteria on an ordinary Tuesday to see how it all goes down.
